The Asolo Prosecco Superiore comes from low yielding parcels of vines from the Asolo hills – one of the best quality designated production zones for Prosecco, tagged with the prestigious DOCG denomination.
This Prosecco ‘Col Fondo’ (cloudy, unfiltered and with sediment) was born from the family's desire to rediscover papà Emilio’s old technique in the production of Prosecco at the Case Paolin family.
Grapes are picked from the estate’s oldest vineyard and then macerated on their skins for 18 hours, obtaining a base wine with strong personality and vivid minerality. A second fermentation in the bottle is then happening, in accordance with the traditional method but without "sboccatura". That yeast in the bottom of the bottle is the symptom of genuine and healthy production. Flowers, yellow fruit and bread crust with a deep mineral sense in the palate will tickle your taste buds. Turn the bottle upside-down 2-3 times before uncorking and embrace its cloudy pleasures. No residual sugar, yes that's dry like a desert...
