Made from a blend of grapes that have undergone a partial (natural) drying to become almost raisin-like in terms of concentration of natural sugars, Vin Santo does have concentrated and very intense flavours, but it is characterised by a dry, almost bitter backbone, and is not to be confused for a full-on dessert wine.
Yes, it is served after a meal in many, if not all, Tuscan restaurants - you'll see people dipping dry almond biscuits - cantucci - into their glass of Vin Santo, but it's also a wine that can be served chilled as an aperitif.
