The Tuscan Vin Santo belongs to the "raisin wine" category. Raisin wine is also very connected to Christian traditions as favourite wine during mass. Vin Santo took its name from the fact that the grapes were left to wither until the "Saint Week" (Easter) when they were pressed. This wine is made by a majority percentage of Sangiovese grapes which gives the special Occhio di Pernice classification. The vineyard is on the Radda hills in Chianti, 350 meters above sea level. Density is 3700 trees per hectare on marl-limestone soils rich of stones and with a good exposure to the sun. Manually picked and selected grapes are put to wither in dry and ventilated rooms for a few months. The natural dehydration enriches the juice of the grapes that reduces to less than 20% of its original size. Maturation follows and the must ferments very slowly in little oak barrels. The must needs strong thermal excursion between night and day and the wines mature for more than 10 years before bottling.  

This wine has a charged amber colour with intense reflections. The aroma is rich and concentrated, particularly complex with hints of candied red fruits. The taste is full, harmonic and complex with a long persistence but it is especially an elegant wine with a very good balance between acidity and sugars.

This is mainly a meditation wine. It can be also matched with bakery (famously enjoyed by dipping Cantucci biscuits in it) or with chocolate. It is ideal at Easter time. The service temperature must be cold between 12 and 14C.
